summer's over

I've been avoiding Blogger because I am so embarrassed about how I haven't blogged in...well...forever. And I knew that once I blogged about our end of the summer trip, it means that summer really is over. Boo! I can't believe how quickly it has gone by! But now that we are on the third day of school, I guess I better get over myself and face the facts and get back to blogging!

Anyway, here are some snapshots from our vacation. I was so grateful for the chance to spend the week with my family! I love spending time with them, and it was a great break before school starts full of lots of speed walking, picture taking, and good car food! My family is the best and I can't wait to see them again at Christmas!

Absent


Hey, sorry to all of three of you who follow my blog regularly that I've been out of the loop lately, but getting any sort of bokeh shot is surprisingly difficult if you don't have a Christmas tree.  So for now I am going to share with you this video Owen found instead. Owen told me he secretly wishes he could do all that stuff. I am secretly glad he can't because we would probably have higher medical bills.

a happy 1st

Celebrating our first anniversary together this weekend was so fun! I am so glad that we were married in the summer so we can always party for our anniversary instead of having to worry about school or other things. We headed up to Salt Lake City for the weekend for a little get-away trip, and we had a blast. We didn't manage to make it to a lot of the things we had planned to do, but I guess that will give us an excuse to return again soon!

Of course, most of the pictures I managed to take were of the food. Go figure. 

We decided that on Friday night we wanted to try the Red Iguana. I have heard so much about this place, and have watched it on Diners, Drive-Ins, and Dives, and we both LOVE Mexican food, so we knew we had to try it.

Our server was SO nice and friendly! He brought us out a little sample plate with each of the different kinds of mole (mole-ay) that they make at this restaurant -- there were 8 kinds! There was a mole negro (rich dark taste), mole verde (much more mild, chile flavor), mole amarillo (yellow, sweet), almond mole (our fave), mango mole (the special of the day, not shown), and more. They were all so flavorful! It was incredible! It is insane how many different things go in to making each of these special sauces, and they had such a unique and delicious taste.


Owen decided to order the Puntas de Filete a la Nortena, which had sirloin strips sautéed with bacon, jalepenos, other peppers and more, all served on top of the almond mole. It was kind of like a fajita but oh-so-much more delicious! Talk about a flavorful sensation! It was incredible!



I decided to order the special of the day, which was mango enchiladas. The mango mole was a great mix of sweet and spicy, and they filled me up so much! It had carnitas (pork) inside, and even though they seemed very simple, they were heavenly! I've never liked carnitas as much as I did with those enchiladas!


We also decided to splurge seeing as it was our anniversary and get some wonderful beverages--I got a virgin peach margarita (it was like a delicious frozen peach dessert!) and Owen got the most delicious horchata I have ever had in my whole life. I am now inspired to figure out their recipe, it was amazing. Plus, free refills--that's what I'm talking about!


Here was the view from our hotel room at night. Even though it probably would have been a cooler view on the north side of the hotel, it was still really fun being on the top floor and looking out over the city. Plus, who doesn't love to take slow exposure shots at night, right??

The next morning we woke up and went to the Salt Lake temple. Three weekends in a row -- woo! It was so fun to go the temple on our anniversary and see all of the other couples getting married, and to remember back to our special day and the promises we made to each other and to the Lord last year. I feel so blessed to have been married in the temple and there was no better way to remember it than to take another trip there!

Unfortunately, the temple took a lot longer than we were planning on, and we didn't get out until around 2 p.m.! Sadly this meant that we missed the farmers market at Pioneer Park which we had been planning to visit, and it also meant that we were starrrrrving! So we decided to go to lunch, and since we loved it so much, we decided to go to the Red Iguana AGAIN! Why not? It was so good! We decided to walk there to hopefully burn off some calories from our wonderful Mexican feast the night before, but there was construction in the way, so instead of being a straight shot from the temple like it should have been, we had to walk all the way around the city to get there through some kind of shady neighborhoods, which was kind of scary since I had both my camera and computer with me!


These tacos are the best thing in my life. Owen ordered them, and I was so jealous of his meal. They are the famed Tacos don Ramon, and they are too amazing to describe. All I'm saying is, you gotta try them. As soon as you can.


I got the Enchiladas Suizas, which are one of their more popular items, and paired it with a wonderful Jarritos beverage, because Mexican food seriously tastes so much better with Jarritos on the side.


I was so hungry that I forgot to take the shot before I started eating! This came with SO much mole sauce, which was delicious! You definitely don't need to order the beans & rice on the side because this is sooooo filling! These enchiladas were stuffed with shredded chicken and avocado slices, with the mole poblana on top. Mmmmmmmmm....


After finishing our meal, Owen decided to run back to the car on his own while I waited at the restaurant with our bag full of the two expensive things we own, since he swore he saw some questionable looking guys following us after we passed the liquor store. We may have been freaking out or overreacting, but better safe than sorry!!! We went to the Salt Lake Public Library after lunch to enjoy the AC while it was SOOOO hot outside. Plus I've always heard that it has some crazy cool architecture, and I wanted to see it for myself!


Unfortunately it closed at 6, so we didn't get to stay there very long, but Owen got to read some Captain America comics and I got my pictures, so I supposed that's about all we can ask for.


Plus they had the coolest bike rack there that I have ever seen!


We did some shopping around the Gateway mall after leaving the library, drooled over the Mad Men collection at Banana Republic (I would seriously love to own every piece of that collection), laughed at all the ridiculous prices at Anthropologie (while I secretly wanted to buy everything in that store as well), tasted some unique olive oils and balsamic vinegars, and played in the water fountain. I wanted to check out Les Madeleines, because supposedly they are one of the few shops in SLC that makes macarons, but they had closed at 4! Ridiculous! Around 8, we headed down to West Valley to go to our drive-in movie! Apparently this is the only drive-in theater left in the state of Utah, and we've always wanted to go to one. Unfortunately, the only movies that were playing that a) weren't rated R, b) we hadn't seen yet, and c) weren't going to make me vomit (umm Smurfs), was the double feature of Planet of the Apes and Cowboys vs Aliens. Both of these movies were seriously dumb (Planet of the Apes was shockingly boring and predictable, while the aliens in Cowboys vs Aliens were AWFUL), but it was fun to experience movies in this way!


Plus it was cool because when you got out of your car, you could see all of the other movies playing around you as well! I hope they don't close this place down because I would love to go there again if there were movie I actually was interested in watching and if we parked next to someone who wasn't smoking the whole time (we had to keep our windows closed, it was seriously gross).


And this is the only picture I got of us together. From the whole trip. And we are in the car. Go figure. Oh well, at least we have lots of wonderful memories and had a great experience together! And we can plan on getting lots and lots more pictures together soon!

we're outta here!


Happy Friday everyone! No, I do not have the next photo challenge ready for you all yet sadly, but I am hoping that I will get a chance to catch a sweet bokeh shot this weekend as we head up to Salt Lake City for our first anniversary! We plan to spend the weekend up there away from our house where we have to make our bed and to the dishes :) On the agenda we've got relaxing, hitting up the pool, going to the temple (again, we loved it!), the Red Iguana, a cute little shop that sells macarons, the Pioneer Place farmers market, a drive-in movie, and spending the rest of the time just enjoying being with each other with nothing else to worry about! Hope you have a fun, enjoyable, and relaxing weekend!

I am so excited to celebrate our first anniversary! Being with Owen this past year has been incredible, and I cannot wait for all of the adventures we have in store for us in our marriage. Thank you for an amazing year Owen - I love you!

Day 16 -- Mason Jars


Yeah yeah yeah. I get in the habit of blogging a bunch, and then stop. Please don't think that I am quitting out on you now, but I have two very good reasons why I have not been blogging lately:

1. It came. Yes. The new computer. But I am not permitted to go into any detail here because my mother is convinced that someone will find my blog, stalk me, and then steal my computer. And I like my computer a lot. So I do not want it stolen.

2. I have been working again. Uggh, I know, right? Swim lessons are back on, and they are actually kind of fun this session, so it's not too bad. I have also been doing a heck of a lot of research lately, since I found out that my IACUC application was due on the 10th, and I thought it wasn't due until the 20th, but we managed to get it in on time and I complete all 5 hours of safety training (snooze fest galore) and I will be able to start my research as soon as we get our fish back from Panama. Yay!


I know this shot isn't exactly the most artistically dynamic or correct, but I felt like it looked quite summery so I wanted to include it! So, these mason jars are the result of my random Pinterest perusing and the ridiculous amount of odds and ends in my craft box and my love of hot glue guns and buttons. If you were wondering why there are clear strings glued on the top, it is because they were originally intended to be hung from the tree in our backyard. I wanted to take a picture of them from the tree of course, but I waited until wayyy too late at night, so this was all I got. I apologize, but you get the idea.

Day 15 - Someone You Love

Okay, I know, I know. I accidentally mixed up days 14 and 15 and then I totally skipped blogging this weekend. But it was a busy weekend, I promise. A weekend full of outdoor concerts (free!), frozen yogurt, temple trips, farmers markets, picture taking, target runs, Captain America, church, sleeping, and getting a heat rash. Very exciting and busy, as you can see. PLUS we just realized that our ONE YEAR ANNIVERSARY IS ON SATURDAY! Holy bananas! How did that come so quickly???

In any case, on to the photo of the day!


Yeah, I bet you knew THAT one was coming. Yay for our one year anniversary coming up--it seriously feels like we were married yesterday, and every day is made so much better with this guy by my side. No, not the one in the tie-dye shirt, it's that hot blond guy in the grey striped v-neck.

Here are some other photos from our adventures at our first of the Rooftop Concert Series. It was a very fun venue, and I loved that it was free! The atmosphere was quite enjoyable, and we couldn't have asked for better weather that evening. If only the music performers weren't so depressing! They had some downer lyrics in pretty much every single one of their songs, but I guys that's what the kids like these days?

and the main performer of the night, mr. joshua james. he was also pretty depressing, and swore in some of his songs/while addressing the crowd! we couldn't believe it! call me prude, but if you are going to perform in front of a group who is mostly LDS and many who have brought their kids, clean up your mouth son. 


he had a thing about raising his arms up funny whenever the photographer was going to take a picture of him. it was hilarious. 

All in all, it was a fun experience, but I think I might listen to the music of the next performing group ahead of time so I know what I am getting myself into!

Day 14- Action Shot


So for today's action shot, I asked da boyz (Owen + Tim) if they could do some tricks off the diving board for me last night before my aqua aerobics class. I hope that you are admiring the ridiculously hilarious wetsuits that Tim brought for them to wear to my class. I was telling one of my students that I am pretty sure that Owen just comes to the class to make everyone laugh and distract me while I'm trying to teach.

Anyway, here's what they came up with. Owen was pretty funny while attempting to do a flip since he totally belly flopped twice in a row after over-rotating. Poor guy. Looked good for the shots though!

Also, speaking of diving, we took the plunge and bought me a new computer. After four years and a few power cord debacles, it's really happening. We haven't gotten it yet, so I'm going to keep it's identity a surprise for a little while longer, but all I can say is that we are pretty darn excited!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Sorry I've Been Blogging So Much Lately...

But when I am off work this week, I just don't have that much else to do! And everything I do have time to do, I just want to share with all of you here on the blog :)

ANYWAY, so yesterday, I decided to do a quick little home improvement project! It was one that I blogged about a little while ago, as you may remember. I was so excited to get started on it, that I completely forgot to take a BEFORE picture. So you are just going to have to use your imagination here people.

Imagine this: a boring, typical old three panel medicine cabinet with two well-used, off-white, partially unfinished shelves and an off-white background.

SO fun and SO easy! I love the pop of color I get every time I go to brush my teeth now, it makes it so fun! And the whole thing probably took me fifteen minutes, at most. It was awesome.

All you have to do is get a few sheets of scrapbook paper (I used four) and some scissors/paper cutter and tape! First, take out the shelves. This may be tricky, but I promise you can do it! Unless they are nailed in of course. Then you measure out your paper to make it fit, cutting pieces as needed. I recommend purchasing paper that has a pattern that will easily overlap. Next, tape those pieces of paper on to the shelf, using a small piece of rolled tape in each corner. Then put the shelves back in, and you are done! Was that easy or what?!

I also painted the shelves with white paint to make them look a little newer, which is probably why this took me 15 minutes instead of 5. Seriously, this is probably the easiest DIY home project ever, and I totally recommend it!

Day 13 - Reminds You of Childhood


I miss playing the piano.

If we weren't poor and didn't have to pay for tuition or get me a new computer or pay for grad school applications, I would buy a piano. Also, if we didn't have to move like practically every year. Pianos are heavy. But I never thought I would miss playing as much as I do.

I have so many memories of playing the piano. I admit that not all of them are the best, like the times my mom would somehow secretly know that I didn't really practice each song three times or when I struggled learning a piece or when I just didn't feel like practicing. But I am so grateful that I stuck with it, and mostly that my mother made me stick with it. I love being able to sit down and play a piece and create beautiful music. Sadly, my skills are getting a little rusty since I haven't practiced much lately, but I am hoping to take a piano class in the winter and get right back in to shape!

Day 12 - Sun Flare


The past two days have been exciting. Let me count the reasons why...

1. Yesterday when I tried to unplug my computer's power cord from the wall, the middle of the cord where it's connected to the little box thing emitted a huge spark that almost started a fire on our shag rug. I stayed far away from it for the rest of the day, and when Owen came home, he concluded that the wires had indeed broken and that I would need another (my fourth) new power cord. I think it's time for a new computer....

2. Due to the excitement of my power cord nearly burning our house down, I jumped backwards onto my bed, right onto my glasses. Which totally bent them out of shape. Cool.

3. We have sold three of our textbooks online through Amazon and made over $200! Sooo much better than the bookstore, plus I get to visit the post office more now, how fun!

4. Being in the market for a new computer and all, I decided to check out the ones at the BYU bookstore while I was there looking for fall books. I was looking at the side of the MacBook Air, trying to figure out how many USB ports it has, when I sort of nudged something plugged in to it, which immediately set off the alarm system. The very LOUD alarm system. I tried to make it very clear that I was not trying to steal the computer, it was just an accident, and man, they sure took their time turning it off! It was so embarrassing. But very exciting, I guess. Just not in the good way. Anyway, I waited until they turned it off, apologized profusely, and then left very quickly. Thought about buying some fudge downstairs to console myself but I just really wanted to get out of the bookstore.


I think I should read a book and then take a nap...that sounds desirably un-exciting :)

It All Started With a Mouse...


Or is he a rat? I'm not sure, but mouse sounds nicer (although they are both honestly gross) so that's what I'm going to go with. Anyway, I love the movie Ratatouille and also the word ratatouille, so when we got an eggplant in our Bountiful Basket and a yellow squash & zucchini from Owen's parents, I knew exactly what I needed to make. I mean seriously, what else can you make from an eggplant that sounds palatable? Even if I thought it was awful, I just wanted the experience of creating something as beautiful as the ratatouille from that film. No normal chunky monkey funky ratatouille--I desired that thinly sliced awesomeness that won over even the toughest food critic.

So I searched and found this recipe titled "Ratatouille's Ratatouille." Perfect! Not only was it from one of my favorite food blogs of all time, but it actually didn't look all that difficult. Much more simple for sure than the supposed original version from the movie, which involves things like way more ingredients, changing the temperature of your oven more than twice, and refrigerating for two days. Who's got that kind of time?

And thus, in the vein of celebrating food blogs I love, I decided to document my ratatouille experience a la The Pioneer Woman, and photograph each step of the way. It's clear that my photos are much less freaking awesome than hers because I don't have nearly as much natural light in my kitchen as she does. Or as much practice, but you know, no big deal. So here we go!


Start by chopping half an onion into very small pieces. I was too lazy plus I love big chunks of onion, so I didn't get as fine as possible, but no worries. Also I've decided that a white onion on a white cutting board does not present a very visually interesting contrast. Note to self: buy wooden cutting board.

Also, preheat the oven to 375 degrees F. Don't be a dummy like me and always forget to preheat the oven.


Then let your teary eyes get a little rest and set the onions to the side while you pour one cup of tomato puree in an oval baking dish (approx. 10 inches lengthwise, but don't worry about it being too exact. Use what you've got).

Somehow I have never heard of tomato puree, but to my delight, there it was at the grocery store right next to the chopped tomatoes and the diced tomatoes and the tomato sauce and the tomato paste and the...okay I think you get the idea.


Add one (heaping is totally fine) tablespoon of minced garlic to the tomato puree. Or if you are following the real recipe and are not lazy like me, you can add 2 very thinly sliced garlic cloves to the mix. But seriously, when you can buy a giant tub of garlic for way cheap, why on earth would you ever go to the work of getting the real thing. I am a garlic LOVER so we go through that stuff pretty fast. Giant tub = almost empty.

Also, please note I am a garlic lover, not a gah-lic lover. Very different. Especially if you ever try getting pizza at Nicolitalia's. Don't say I didn't warn you.


Now grab those chopped onions and add them to the tomato puree as well.


Please take a moment to admire this action shot. It was quite difficult to get a picture of me pouring olive oil while also taking a picture. I don't know how she does it--the Pioneer Woman is truly incredible.

Anyway, add one tablespoon of olive oil and stir it all up. Try not to splash the sauce up on the sides like I did because we all know that the real goal of ratatouille is for it to look pretty.


Season the tomato mix generously with salt and pepper. I used kosher salt & fresh cracked black pepper because they really just make everything better. If you are a serious pepper fanatic like my husband (you should see it when he makes fried eggs) then you must invest in a pepper grinder.

I am so glad my mother gave me these grinders for my birthday--between those & the camera, easily the best birthday ever.

Now the base is prepared! Next you gotta get slicing on those vegetables!

For this recipe, I used 1 eggplant (they say to try to get an Italian eggplant, which is a little smaller. I just used a normal one and threw a little part of it away because I seriously have no idea what else can be made with that thing), the equivalent to 1 smallish yellow squash & 1 smallish zucchini, and 1 red bell pepper. In reality, the vegetables we got from Owen's parent's garden were HUGE so I just cut up enough slices that I thought would fit in the pan. In my mind, it's better to cut less than you think may fit because you can always cut up more afterwards if you have more space (like I did) than to have awkwardly thinly sliced vegetables left over.

Cutting the vegetables as thin as possible is THE KEY! Seriously, it is the most important part for this to be a success.


Here's how thin mine were. Yeah I'm pretty proud. Except the red pepper was kind of hard to slice thinly. But take your time and have patience, because it really truly does make all the difference.

If you are super cool like the girl from Smitten Kitchen, then you can use a mandoline to slice them thinly, which would probably be easier. But I don't have one of them, and like my dad always said, "Why do I need another thing in the kitchen that does what a knife can do?" Okay I don't know if he ever actually said that, but that was how he felt. So a normal (sharp) knife will work fine, but if you want to justify your mandoline purchase, then this is the perfect recipe for you.


Look at all those pretty vegetables--yay! My eggplant got kind of oxidized which I was worried about, but it ended up fine. Now comes the fun part! I will use Deb's words because they are just so perfectly stated:

Atop the tomato sauce, arrange slices of prepared vegetables concentrically from the outer edge to the inside of the baking dish, overlapping so just a smidgen of each flat surface is visible, alternating vegetables.


Aww yeah. This is fun. I went with an eggplant-squash-zucchini-pepper pattern because I thought the colors contrasted nicely this way, but you can have fun with it however you like!

Once the vegetables are all arranged (don't stack any on top of each other!), drizzle another tablespoon of olive oil on top, and season generously again with salt & pepper.

Then the recipe says to add fresh thyme on top of the ratatouille, but since it was ridiculously expensive at Macey's, I just went with the good ol' stand-by Italian Seasoning to go on top. That stuff is just so versatile.


Next is the hardest part. You have to cut out wax paper to fit on top of your ratatouille. I was silly and went with a pretty shaped dish, which made it harder to fit, but I developed a technique that made it way easier if you've got an extra set of hands around. Have your husband (or other helper) hold the wax paper flat while you trace with a Sharpie around the outside of the dish, then just take it off and cut it out and then place it on top! Easy peasy.

You're technically supposed to use parchment paper to cover the ratatouille, but it's way more expensive and does the exact same thing as wax paper, so I've never bought if before. But if you have parchment paper on hand, feel free to use this instead.

The wax paper is vital because it will keep the vegetables from browning, but will allow them to cook through until the juices are released.

Cook in ze oven for 45-55 minutes. When it comes out, the vegetables should be visible cooked, but not totally floppy, and the tomato sauce should be bubbling up between the vegetables.


Just like this! YAY! It looks so awesome! I hope you are admiring how very quite thinly those vegetables were sliced, just like I am right now.


Then serve on top of polenta (shown above) or couscous or some other grain of your choice, or with some French bread. Deb from Smitten Kitchen also recommended serving it with a dollop of goat cheese on top, which sounded divine, but when I went to Macey's, this is what happened:

Me: (to the employee unloading cheese into the aisle) Umm, excuse me, do you have any goat cheese?
Guy: Uh, what's that?
Me: (awkward, dumbfounded silence)
Me: Well, it's cheese, but made from goats instead of cows.
Guy: Can you tell me what it looks like?
Me: So, it looks like cheese, and it's white, and kind of spreadable...

Needless to say, they didn't have any. So I settled for feta atop my masterpiece instead, which was still pretty good.

And there it is! You survived this wickedly long post and now know how to make ratatouille. And here is the best part of all--we actually liked it! I was really surprised because I don't like eggplant or red bell peppers at all, and am not even the hugest zucchini fan, but somehow when they all came together in that thinly sliced bite...it was delicious! What a pleasant shock!

Here's the recipe in a condensed form, lifted straight from Smitten Kitchen. For my alterations, read above.


Ratatouille’s Ratatouille
As envisioned by Smitten Kitchen

1/2 onion, finely chopped
2 garlic cloves, very thinly sliced
1 cup tomato puree (such as Pomi)
2 tablespoons olive oil, divided
1 small eggplant (my store sells these “Italian Eggplant” that are less than half the size of regular ones; it worked perfectly)
1 smallish zucchini
1 smallish yellow squash
1 longish red bell pepper
Few sprigs fresh thyme
Salt and pepper
Few tablespoons soft goat cheese, for serving

Preheat oven to 375 degrees F.
Pour tomato puree into bottom of an oval baking dish, approximately 10 inches across the long way. Drop the sliced garlic cloves and chopped onion into the sauce, stir in one tablespoon of the olive oil and season the sauce generously with salt and pepper.
Trim the ends off the eggplant, zucchini and yellow squash. As carefully as you can, trim the ends off the red pepper and remove the core, leaving the edges intact, like a tube.
On a mandoline, adjustable-blade slicer or with a very sharp knife, cut the eggplant, zucchini, yellow squash and red pepper into very thin slices, approximately 1/16-inch thick.
Atop the tomato sauce, arrange slices of prepared vegetables concentrically from the outer edge to the inside of the baking dish, overlapping so just a smidgen of each flat surface is visible, alternating vegetables. You may have a handful leftover that do not fit.
Drizzle the remaining tablespoon olive oil over the vegetables and season them generously with salt and pepper. Remove the leaves from the thyme sprigs with your fingertips, running them down the stem. Sprinkle the fresh thyme over the dish.
Cover dish with a piece of parchment paper cut to fit inside. (Tricky, I know, but the hardest thing about this.)
Bake for approximately 45 to 55 minutes, until vegetables have released their liquid and are clearly cooked, but with some structure left so they are not totally limp. They should not be brown at the edges, and you should see that the tomato sauce is bubbling up around them.
Serve with a dab of soft goat cheese on top, alone, or with some crusty French bread, atop polenta, couscous, or your choice of grain.
